The Wood Fired Pizza Company was born out of a love of good food. It may be a cliche, but the company founder, Joe, quit his ‘proper’ job after 10 years in marketing to follow his passion for making and eating great food.
‘My mission is simple: to create and serve the best quality food possible – the food that I love and want to eat – and think everyone else should too. I’m obsessed by food but I’m not really into fine dining. My real love is for relatively simple food cooked at its finest using the freshest and best ingredients. The sort of food that is often mistreated and poorly delivered, but is wonderful when well made. And there isn’t anything better in my view than a properly made artisan pizza – it’s a thing of beauty!’
Authentic Neapolitan pizzas
In our attempt to make the perfect pizza we stay faithful to the traditional Italian Neapolitan pizza – the universally accepted gold standard of pizza making. To make an authentic Neapolitan pizza every single ingredient and process must follow strict guidelines as detailed by the Association of Vera Pizza Napoletana (Association of True Neopolitan Pizza).
A brief overview of the key Vera Pizza Napoletana (VNP) components include that pizzas must:
- use dough made with flour, water, yeast and salt only
- use OO flour
- use San Marzano tomatoes
- be hand stretched – no rollers or machines!
- be cooked at 400 degrees or higher
- be cooked in a wood fired oven
